Well so many have asked for it so here it is…Tom’s World Famous Scone Recipe with step by step video instructions.
For over 16 years Tom has been making scones that have become World Famous. Guests from around the globe have e-mailed and texted to say “I am in scone withdrawal and need to come back” “These are the best scones EVER”.
Tom was asked so many times for the recipe that he finally took the time to measure the ingredients, yes he is one of those types of chefs that do not use measuring utensils, creating the “world famous scone recipe”. This creation helps those of us who do not bake by more than a tap or pinch instructions, but a recipe has the measured out tap and pinch simplified.
The basic dough works for all scones with the modifier being the fruit. Gibson Mansion uses fresh fruit that is blanched frozen to give the full flavor of the fresh fruit but avoids the smooshing that happens when incorporating them into the dough.
Here is the Blueberry recipe, but remember you can modify to whatever flavor you would like or have on hand.
Blueberry Scone Recipe
Makes 8 servings
- 2 cups white flour
- 3 tablespoons white sugar
- 1 ½ teaspoons baking powder
- 1 stick butter
- ½ cup white chocolate chips
- 1/3 cup blueberries
- ¾ cup milk
- Sugar in the raw
Preheat convection oven to 400
In Kitchen aid mixer, combine butter, flour, sugar, and baking powder, until mixture resembles coarse oatmeal. Add white chocolate chips, while mixing add milk and mix until blended. Remove from blender and form into flattened round about ½ inch thick on counter. Add Blueberries and fold dough over to create new smaller 1” thick circle. Sprinkle top with sugar in the raw. Cut circle into 8 pie shape pieces and place on baking sheet. Convection Bake @ 400 for 18-20 minutes or until golden brown.
